West Cork Distillers is an independent Irish whiskey distillery located in Skibbereen, County Cork, founded in 2003 by childhood friends John O’Connell, Denis McCarthy, and Ger McCarthy. What began as a small-scale operation in a back room in the nearby fishing village of Union Hall has grown into one of the largest independently owned distilleries in Ireland.
The founders combined diverse backgrounds—including fishing and food science—with a shared passion for high-quality Irish spirits. From these humble beginnings, the distillery expanded rapidly, eventually moving to a larger facility on Marsh Road in Skibbereen with significant production capacity and a growing international reputation.
